Pressure Cooker Lemon Chicken

Very simple yet very tasty, pressure cooked lemon chicken will send your taste buds on a roller coaster ride of pleasure.

Pressure cooker Lemon Chicken – You will need:

  • (3 to 3 1/2 lb.) chicken, cut into evenly sized pieces.
  • 2 to 4 tbsp. olive oil.
  • 1 tbsp. chopped garlic.
  • 1 cup chicken broth/stock.
  • Juice of 1 lemon.
  • Ground black pepper and salt, to taste.
  • 1/2 cup of white wine.
  • Slices of lemon.
  • tsp of dried thyme (optional)

Pressure cooker Lemon Chicken– Method:

Take your chicken and pat it dry with some paper towels then Season the chicken with ground black pepper, if your using thyme sprinkle this on the chicken at this point. Heat your oil in the pressure cooker, on a medium to high heat. Now add your chicken and cook for around 10 minutes, this should be enough time to ensure your chicken is well browned on all sides. Drain off the excess fat.

Take your broth, lemon juice, garlic, wine and add to a bowl, mix well before pouring the mixture over the chicken.

Safely lock your cookers lid in place and allow to cook for around 8 minutes over a medium heat. Set your regulator so it allows a slow steam release. Now take your cooker off the heat and use the quick release feature on your pressure cooker.

While taking care, remove the lid and take out the chicken, if you wish to thicken the sauce then do so, you can add a little flour to help the process. Serve the chicken on a plate and pour the sauce over the top and if you wish garnish the dish with slices of lemon.
