Pressure cooker brown rice – Simple and Quick

Most people know that brown rice is much better for you than white rice yet its white rice that is most popular between the two, why? who knows, maybe its something to do with the fact a lot of people think brown rice is boring and bland. Fact is you can make super tasty pressure cooker brown rice in quick time and with ease. I’ll get on with the recipe now and write about the health benefits afterwards. This is as basic as it can be and really tasty.

This will serve 4 people if your using it as a side dish with a curry etc. On its own it will be more than enough for 2 people.

  • 1 cup of brown rice (medium grain if possible)
  • 1 medium sized onion
  • 1 cup of chicken stock see pressure cooker chicken stock to learn how to make your own
  • 1 1/2 tablespoons of oil.

Now i have a somewhat obsession with experimenting with Chinese 5 spice, i add this to pretty much everything i cook when testing. And i feel it works well with this recipe. If you want to try it then by all means do so by adding just half a teaspoon, no more than that as the pressure cooker intensifies herbs and spices which could lead to meals becoming overpowered with the flavor.

Method – Pressure cooker brown rice

The method is super simple, rinse your brown rice thoroughly and allow it to fully drain for a few minutes. While its draining finely dice your onion. When the rice has finished draining add it to your pressure cooker along with the oil, onion, chicken stock and Chinese 5 spice (if your using it).

Combine all the ingredients using a spoon to stir them and place the cooker on your stove over a high heat and allow to come to boil. When your mixture reaches a boil safely lock the lid in place and bring to pressure. When the whistle sounds lower the heat while maintaining pressure, let it cook for around 14 minutes. After this time remove the cooker from the stove and allow pressure to release naturally.

Once pressure is released allow it to sit for a further 5 minutes with the lid still in place, then give the rice a quick stir and serve. If you notice that a little liquid is still in the cooker then simply but the pot back on the stove without the lid and cook out any remaining fluid.
